Healthy Turkey N Rice Casserole

Ingredients:
1 lb Lean ground Turkey (or beef, your preference) I used 1.25 lbs. ground turkey
1 can Healthy Request or Low Fat Cream of Mushroom Soup
4 Tablespoons Light Soy Sauce
1/2 Onion
1/2 large Green Bell Pepper
4 cooked servings Brown Rice

Cook the meat and Rice (I forgot to take a picture of the rice)

Chop up the veggies

Mix the veggies with 4 tablespoons soy sauce and let it soak until ready to put into dish

Mix the cream of mushroom soup with the ground turkey ( I know this picture doesn't look appetizing, but this dish is absolutely delicious!)

Place rice on bottom, then ground turkey and soup mixture, the place the veggies on top of the ground turkey and soup mixture and pour the soy sauce from the bowl over dish. Cover with Foil. Cook at 350 Degrees for 40 minutes.

Enjoy!!

Directions: 
1. Preheat oven to 350 Degrees
2. Cook Ground Turkey and Rice
3. Cut up Veggies while turkey and rice are cooking
4. Mix Veggies and Soy Sauce together
5. Mix Ground Turkey and Cream of Mushroom Soup Together
6. In a 8x8 casserole dish, place rice on bottom, top the rice with the meat mixture, then top with veggies and soy sauce.
7. Cover with Foil.
8. Bake at 350 Degrees for 40 Minutes

I got this recipe from my amazing friend, Jillian, thanks Jillian!!! When I made it for dinner last night my kids asked for seconds and Emma said very excited, "Thank you Mommy for making this, it's my favorite!" I love this recipe and hope you enjoy it as much as me and my family did!!
